Woop! Another 2 pounds. I'm liking this. A lot.
How is everyone doing? I'm just feeling pretty glad to have made it to the weekend. This past week was BUSY. Full of really fun stuff though...support group with my dynamic duo, coffee with a new friend, dinner with an old friend, and Holiday House with the best friend. And four workouts squeezed in between. I know like a lot of you, this is the time of year when I start feeling like there are just not enough hours in the day. I also think the fact that it gets dark at like 4:45 in the afternoon has a lot to do with that too.
We are also in the final stretch before Thanksgiving at school. For the first time ever, we will get the full week off at Thanksgiving. I think I'm going to really dig it, but we had to give up some things to have it this way. There have been zero breaks since Labor Day, and the kids are tired. So. Are. We.
I cooked only one single time this week. I made a really good version of a Taco Bell Mexican Pizza. I like to pretend I don't like Taco Bell, but then I think about their Mexican Pizza and I realize I'm just a big faker. Oh the cripsy, greasy, deliciousness. My version is a regular flour tortilla baked until crispy, a schmear of fat free refried beans, 4 oz seasoned ground beef, some 2% shredded cheese, and my beloved Ortega (tastes just like Jack in the Box) taco sauce. 368 calories, 35 grams protein, and it was a monster. I could not eat the whole thing. I'd say about two thirds.
The other meals this week were grabbed on the go. Wendy's chili one night, some shrimp from Pei Wei. Lunches were the exact same every day: 2 oz smoked ham, red pepper hummus, a string cheese, and my new favorite thing...Special K cracker chips. My friend Melissa turned me onto these, and they are so, so good. A half serving is a HUGE amount and only 55 calories.
I had my fifth fill on October 30, and this one was the game changer, folks. I now have 6.2cc in my 10cc band. I know it's all different for everyone, but this is the one that has caused me to make some major adjustments. Like? I can't have both breakfast AND lunch during a regular school day anymore. Until this last fill, I was having breakfast at 10:00 and then lunch at 12:45. Not anymore. I always start the morning with my Unjury coffee and then about 9:45 I have a Nature Valley Granola Thin. They are really delicious and just enough to keep me going until lunch time.
On workout days, I have a second cup of Unjury coffee around 2:00. I know it's the caffeine boost as well, but since I've started doing this, I have discovered that I can go longer and harder, and I don't feel like I'm about to pass out by the end of my workout. I've worked up to 25 minutes on the Cybex Arc Trainer. I still just LOVE it. By twelve minutes in, I'm pouring sweat. I've also switched to free weights instead of the Cybex weight machines, and I can really tell a difference. A trainer told me one time that cardio melts the fat, but you want to be building a brick house underneath with the weight training. I like that analogy. I'm all about building a Brick House. Shout out to The Commodores. :)
