Because...Cake.

It wouldn't be ridiculous to say that at least ten of my extra pounds might be the direct result of my love of Carrot Cake. Do you all adore it as much as I do?

I think it might be my favorite dessert of all. Ok...I mean...besides Lemon Icebox Pie, Strawberry Cake, and warm Chocolate Chip Cookies. It's crazy to think that I didn't even taste Carrot Cake until my senior year of college when my roommate insisted that I try it. I think the conversation may have gone a little something like this:

Karyn: You mean to tell me that you've never had CARROT CAKE? Who raised you?

Me: Who wants to eat cake made from carrots?

Karyn: Just taste it. It doesn't taste like carrots AND it has cream cheese icing.

Me: Ok. If I have to. Gimme that. I'll take a little bite. (Eyes immediately roll to the back of head. An obsession begins.)

So what's a Bandster to do when she needs to get the Carrot Cake monkey off her back? Answer: Head to the nearest Cheesecake Factory and order some. Just kidding! A bite of "real" Carrot Cake is just fine every now and again, but if you're like me, you might need it on a semi-regular basis. I've got a 135 calorie version that will allow you to do this and not feel the least bit guilty about it.

A few posts ago, I mentioned that I had started eating VitaTops again. I had kind of forgotten about them. I don't know why, because they are DELICIOUS. Only problem is...stores in my area really only carry 2 flavors: Deep Chocolate and Cranberry Bran. I went online and found a coupon for 20% off and free shipping and then I went a little crazy. I ordered Deep Chocolate, Chocolate Chip, Banana Nut, Golden Corn, and my favorite Carrot Cake.

Now...no one is claiming that this VitaTop Carrot Cake is as amazing as the Cheesecake Factory's, but it gives me the flavor I crave for just few calories, 6 grams of protein, and best of all...9 grams of fiber.

You'll need a Carrot Cake VitaTop, a wedge of Laughing Cow Light (or light cream cheese), and a little bit of sweetener. I used a bit of Splenda.

Take a fork and whip the Laughing Cow with Splenda until it's as sweet as you want it, and a little bit fluffy. We're going for that cream cheese icing effect. :)

Spread on the warm VitaTop and...viola. A delicious little cake.

  4. I didn't even have to read the post before I laughed at the title--it cracked me up! but i have to admit that the carrot cake vitatop with the mock cream cheese frosting looks DELICIOUS. I need to find somewhere local and affordable to try them. of course, the ELB would eat every single one of them before i got home from work if i had them in the house--he will mow through some fiber sweets.

  6. Vitatops! Wow... I remember my mom eating those a few years back... the chocolate ones are pretty good :)

    If you don't mind, I'd really like to email you with some questions about the surgery... the seminar I went to today didn't really 'put my mind at ease' and I'm scheduling a consult with another doctor (further away...). I just have a lot on my mind and don't know anyone in real life who I can ask... let me know if I can email you.. I would appreciate it!

  8. Ok! I've caught up on all of the old posts and I have a few questions:
    1. A while back you said that you were considering increasing your calorie intake to 1000-1200 per day. Did you do this? I eat between 850 and 1000 and often wonder if I'm eating too little. I really feel like quantity-wise, I eat plenty of food, I just eat so healthy, I stay really low on calories.
    2. Are you still accepting MyFitnessPal friends? I luuurve MFP.
    3. Are you still having problems with Plantar Fasciitis? I'm a nurse and I had debilitating PF for four long years. I tried it all. This past fall, a couple of months before my band, I finally found MY cure. I must have bought a hundred shoes, trying to find the right ones. Most of them very expensive. There is a brand of shoes called Alegria. They are sold in nursing uniform stores and I've also seen them at Dillards. They have a higher arch (which is what I think I've needed), they are not as hard as those Dansko's, but not as soft as a tennis shoe. I wear the style that has a back (as compared to the slip ons). It took me about a week to get used to them. They made my arch feel funny and the top was kinda tight across my foot but it stretched out. They have made all the difference in the world. I have 2 pair. I always wear them to work and I try to wear them on my off days too. It's been ok with jeans. Not sure what I'll do this summer. They do make sandals, but they're all big and bulky.

    Anywho...hope your feet are better.

    1. Whoa! Are you completely and totally sick of me? Ha! Seriously...thank you so much for reading all of that. I hope at least some of it was informational. :)

      You know...I never did increase my calories. It's something I never revisited after my weight loss started picking up again. But honestly...it's something I still think about doing every now and again. Right now I tend to hover in the 900-950 neighborhood and it's working pretty well.

      I'm happy to report that my PF seems to have all but vanished. Unless I'm on my feet for a VERY long time in the wrong shoes. I know exactly the brand you're talking about! They make good stuff! I'll tell you one thing....the bout with PF has caused me to be a very careful shoe shopper. I won't even consider a shoe unless it has great support.
